Gluten is a protein found in certain grains. The most recognizable forms of gluten are wheat, rye and barley. There are numerous grains that are naturally gluten free such as oats, buckwheat, and millet. It is critical to ensure that gluten free grains and flours are certified gluten free as adjacent fields and other factors can lead to cross contamination, rendering them unsafe, most notably with oats. Gluten can be hidden in many processed foods such as soy sauce, making it vital for the consumer to read ingredient labels for allergen disclosures.
Celiac disease is an autoimmune disorder in which the body incorrectly forms an immune response to the gluten protein. When a person with Celiac disease eats gluten, their immune system attacks the small intestine. Over time this immune response damages the villi in the small intenstine which are responsible for vital nutrient absorbtion. Left undiagnosed, Celiac disease can lead to other health complications of all bodily systems. Luckily, when caught early, Celiac disease can be managed by completely removing gluten from the person's diet.
We encourage all of our customers to inform our employees of their allergies prior to ordering to ensure safety. We address many allergens including gluten, peanuts, soy, tree nuts (with the exception of coconut) and sesame; none of which are used in our facility. Although we do use lactose free cheese on some frozen pizzas, we produce no other dairy-containing products. Eggs and coconut are present in the bakery, but our tedious cross contamination protocols ensure the safety of our customers so long as we are notified of their needs. We also offer a variety of vegan products, produced in a segregated manner. Many of our customers have various other allergies such as corn, artificial coloring, yeast, and other foods, however we can provide safe products if we are informed of the allergy.
We have a variety of cupcakes available in the bakery on a daily basis, however cakes have to be ordered about a week in advance. For last minute requests, call the bakery as we do our best to accommodate shorter timelines. We offer both personalized cupcakes and cakes to match the theme of your party. Although you find eggs in the dairy section of the grocery store, they are not considered dairy. Dairy only includes products made from or containing milk from a cow or other mammal. All of our house made products are free of dairy (except for sheep cheese pizzas), however our vegan products are egg free as well as dairy free.
